We’ve always believed that food is the truest window into a place — that a meal can tell you more about a culture than any museum ever could. In Spain, that belief deepened with every bite. From quiet farmhouses tucked into the hills to family-run restaurants where the chef greets you by name, each experience reminded us that slowing down to share a meal isn’t just about eating — it’s about belonging, even if just for an evening.

O BALADO: Where Galicia Speaks in Flavors

We almost missed O Balado the first time. The road curved through the Galician countryside, past mossy stone walls and small farmhouses, until a weathered sign pointed us toward what looked like someone’s home. In a way, it was.


The Setting

The restaurant sits in an old stone farmhouse surrounded by gardens, the kind that feel tended with equal parts patience and love. Inside, wooden beams stretched across a low ceiling and the scent of wood smoke and simmering broth lingered in the air. Only a handful of tables filled the room — sixteen seats in total — and by the time we settled in, we felt less like guests and more like friends invited to dinner.



The Philosophy

The husband-and-wife team behind O Balado move through the space with quiet purpose. He cooks; she guides you through the experience with the same warmth you might expect from a host welcoming you home. Almost everything on the menu comes from nearby — vegetables from their garden, fish caught that morning, meat from local farms. You can taste the closeness of it all.


The Menu

We didn’t order; we trusted. The tasting menu unfolded in small, thoughtful courses — each dish arriving like a story about the region itself. Briny clams from the Atlantic coast. Pork so tender it seemed to melt on the plate. Garden vegetables dressed so simply they tasted like the essence of summer. And then dessert — a reimagined tarta de Santiago, delicate and fragrant, the perfect final note.

A MEMORABLE STAY AT THE LODGE POZOS: CULINARY DELIGHTS WITH CHEF ESMERALDO AND LAURA 


We arrived at The Lodge Pozos late in the afternoon, the León countryside stretching endlessly around us. The lodge sits quietly among rolling hills, a place that feels almost suspended in time. From the moment we walked in, we knew this wasn’t going to be just another stop on our trip. It was a retreat, a pause, a space where we could breathe, cook, eat, and simply be.


The Setting

The Lodge Pozos is a serene haven, surrounded by the natural beauty of the León countryside. The rustic charm of the lodge, combined with modern comforts, creates an inviting atmosphere. That evening, we were the only guests — a small luxury that made the place feel like it belonged to us alone.

 

Culinary Delights

The highlight of our stay was undoubtedly the food. Each day, we were treated to culinary masterpieces prepared by Chef Esmeraldo, whose passion for local ingredients and innovative cooking techniques shone through in every dish. From tender cuts of local meat to fresh seafood, each plate was a celebration of the region’s ingredients and traditions. And then there was Laura, who paired every course with exquisite aperitifs, her warmth and attention making each sip feel like part of the story.




Cooking Class with Chef Esmeraldo

One of our favorite moments was the hands-on cooking class with Esmeraldo. We rolled up our sleeves and learned to make traditional dishes like tortilla Española, croquetas, and Asturiana fabada — even cutting jamón under his guidance. Cooking alongside him gave us a deeper appreciation for the care and patience behind every meal we’d eaten.






A Stay to Remember

In just two nights, we saw sunrises and sunsets over the hills, ate some amazing food, and felt lucky to find a place where everything—food, hospitality, and scenery—fits so well. The Lodge Pozos wasn’t just a stay; it was a lesson in slowing down, in tasting life fully, and in finding joy in the small, deliberate acts that make travel meaningful.

By the time we left, our hearts were full — not just from food, but from the experience itself. It’s the kind of place that lingers with you, long after you’ve returned home, reminding you why slow travel matters.









DONAMARIA'KO BENTA: A CULINARY HAVEN IN NAVARRA 


Our journey through Navarra led us to a delightful discovery: Donamaria'ko Benta. This charming restaurant, located in the tranquil village of Donamaria, offered an unforgettable dining experience that perfectly captured the essence of Navarrese cuisine. Over the course of our visit, we were treated to an array of exquisite dishes.


The Setting

Donamaria'ko Benta is located in a picturesque spot surrounded by rolling hills, lush greenery, and beautiful Ezpelura River that you can admire if dining outside. The restaurant itself exudes country charm.


Culinary Delights

The culinary experience at Donamaria'ko Benta is nothing short of spectacular. Sisters, Haizea and Lorea pride themselves on using locally sourced, seasonal ingredients, and this commitment to quality is evident in every dish.


We highly recommend Donamaria'ko Benta to anyone traveling through Navarra. We had a lovely two night stay right next door at Donamaria'ko Benta Rural Hostel. It’s a place where you can slow down, savor the region’s finest cuisine, and create lasting memories.




BODEGA EL CAPRICHO

Bodega El Capricho, located in the small village of Jiménez de Jamuz in Spain's León province, is hailed as a mecca for meat enthusiasts. Renowned for its world-class beef and the vision of its owner, José Gordón, the restaurant offers a unique dining experience rooted in tradition, sustainability, and a deep respect for the art of farming and grilling.
